My favorite dish of all time. love it paired with plain white rice. I grew up on this dish. We grew our own corn, clean it, cut it off the cob, and made the best of the world. My Mom was awesome in the kitchen. I AM HER!!! But, I didn't get this recipe or pay much attention to all of the ingredients needed!! After so many years of trial and era, I found my grove with creamed corn the Summer of 2022!! Before then. the result was inconsistent at best.
Princess's Creamed Corn
20 Ears Corn
1 Cup Heavy Cream
Bacon renderings - 2 tablespoons
Salt & Pepper to taste
1/4 cup sugar or to taste
1/4 cup flour
Cook in a non-stick pan. Make sure to cut the tip of the corn off and not the entire kernel. This is very important. Most the kernel needs to be raked off the cob by a knife.
Add corn to non stick pan. Add bacon grease. Add Heavy Cream. Cook on very low for 1 hour or when it thicken. Add flour mixed with a little water to corn. Once the corn is near done, add seasonings. Sweeten with a little sugar.
